Vegetable Patties – Vitamin Booster

Vegetable patties with a twist! Not just taste but also the colour.

Earlier I had posted some protein rich patties. Now is the time to get a vitamin boost.

Patties are never considered a very healthy food item but if prepared in the right manner they too can make it to the healthy food items list.

And this is exactly what we aim to do here. Prepare a healthy snack recipe that can be enjoyed by all – children and adults. Stack it between two slices of bread or in between a bun and you have a sandwich or a burger which is far better than the original versions.

Children coming home from school need their share of snacks. Serve them these patties and rest assured. After all it is a healthy snack item.

How did I decide to make these vitamin rich healthy patties? I had two carrots and two beetroots lying since some days. Didn’t know what to do when this brilliant idea struck. I could make red vegetable patties.

So what are we waiting for? Let us prepare some Vegetable Patties with a vitamin dose.

Ingredients:

  • Carrots – 2 no.
  • Beetroots – 2 no
  • Potato – 2 medium size
  • Onion – 1 chopped
  • Garlic – 3-4 cloves chopped
  • Cumin seeds – 1 tsp
  • Asafoetida – a pinch
  • Chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Garam masala powder – 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Dry Mango powder – 1 tsp
  • Juice of one lemon
  • Salt as per taste
  • Coriander leaves – 2 tbsp chopped
  • Oil – 2 tbsp + shallow frying
  • Rawa (semolina) – 1 cup

Method:

Peel the carrots, beetroots and potatoes.

Boil all three vegetables. Mash the carrots, beetroots and potatoes when still hot. Mashing when hot gives better results. If you allow them to cool mashing will give lumps.

Heat 2 tbsp of oil in a heavy bottom pan.

When oil is hot add the asafoetida and cumin seeds. When the seeds are crackling add the garlic, turmeric powder and saute for half a minute. Add the onion and continue to cook till onion turns golden brown.

Add the chilli powder, coriander powder and garam masala powder. Cook for a minute and add all the mashed vegetables.

Add the salt and mix very well.

Continue to cook till the mix leaves the sides of the pan.

Add the dry mango powder, lemon juice and coriander leaves.

Mix the ingredients very well to get a perfectly even mixture.

If having immediately, heat oil in a heavy bottom pan for shallow frying the patties.

While the oil heats, shape the mix into small balls. I leave the size of the balls upto you. It all depends upon your choice. Roll the balls in the rawa. Flatten slightly between the palms and gently slide into the pan.

Carefully observe the patties as they will not change much colour. When the rawa is slightly brown and the surface feels a little firm the patties are done.

Serve hot as you desire – with chutney, sauce, between slices of bread or as a burger filling.

 

 

 

 

These patties can be prepared in advance till the point of rolling in the rawa. You can store the patties in this form for a day or two.
