Protein rich vegetable patties – serve them simply as patties or as a filling for burgers.
Vegetable patties are usually made with a strong potato base which makes it rich in carbohydrates. Traces of vitamins and minerals can be found in the vegetables but what about the protein?
Protein is much required for everyone. So how can you make a protein rich vegetable patty? Our soya granules come to the rescue.
Vegetables patties are given an instant protein punch with the soya granules.
These patties are similar to the vegetable patties with the only difference being the soya granules.
Ingredients:
- Potato – 1 medium (chopped)
- Soya granules – 1 cup (soaked in hot water as per instructions on the pack)
- Carrots – 1/2 cup (chopped)
- Onion – 1 medium (chopped)
- Cauliflower – 1 cup (cut into small pieces)
- Peas – 1/2 cup
- Chilli powder – 1/2 tsp
- Coriander powder – 1/2 tsp
- Garam masala – 1/4 tsp
- Juice of half lemon
- Cumin seeds – 1/2 tsp
- Haldi – 1/2 tsp
- Coriander leaves – 1/2 cup
- Rawa (semolina) – to coat the patties
- Oil – 2 tbsp for making the mix plus oil for drizzling on the patties
- Salt as per taste
Method:
Heat oil in a thick bottom pan.
Add the jeera and haldi. If the oil is hot enough the jeera will crackle, which it should.
Add the chopped onion and cook.
When the onion is soft and translucent add the chopped potato, carrots, peas and cauliflower.
Add the salt, stir and cover. Stirring occasionally, allow the vegetables to cook.
When cooked, add soya granules, chilli powder, coriander powder and garam masala.
Using potato masher, mash the vegetables.
The potato acts as a binder keeping all ingredients together.
Add the lemon juice and coriander leaves, stir well to mix, cover and leave for sometime.
When the mix is slightly cool divide it into small lemon sized portions.
Coat the patties with semolina (rawa).
Heat 2 tablespoons of oil in a pan.
Flatten the semolina or rawa coated balls between your palms and slide into the pan of hot oil.
Cook on both sides till golden brown.
Serve hot!
