Are you short of time and looking for a quick breakfast or snack? A vegetable sandwich is just what you need.
Simple and minimal ingredients put together make for a quick, yet filling and satisfying bite. If you have a minute to prepare coffee or juice nothing like it.
The filling can depend upon your choice and availability. Here I have used what I had at hand.
Ingredients:
- Salad leaves – 1 cup roughly cut
- Capsicums – 1 cup cut julienne (red, green and yellow)
- Onion – 1 sliced
- Mustard sauce – 1 tsp
- Freshly ground pepper
- Salt as per taste
- Dry basil – 1/2 tsp
- Cheese grated – 1 cup
- Bread slices – 4
Method:
Add all the filling ingredients, except the cheese, to a bowl. Using a large spoon mix the ingredients very well.
Lay out two bread slices. Roughly spread one fourth of the cheese on one slice.
Place half of the filling on the cheese, top up with one fourth of the cheese.
Top up with the other bread slice.
Repeat with two more slices of bread.
Grease a hot tava with butter or ghee.
Place both sandwiches on the tava.
Toast the sandwiches till both sides are a golden brown. By now the cheese would have melted and the sandwich would be well sealed.
Alternately, you can toast your sandwiches in an oven. The results will be more or less the same.
Other filling options can be olives, jalapeño, cabbage, shredded carrots, tomatoes and our very humble potatoes.
