These need no introduction. Be it children or grown ups we all love them. Let’s get started.
We need:
- Chicken breasts – 2 pieces
- Maida (refined flour) – 1 tbsp
- Egg – 1
- Breadcrumbs seasoned with herbs – 2 cups approx
- Salt to taste
- Pepper to taste
- Oil for deep frying
Method:
Cut the chicken nuggets in bite sized cubes.
Sprinkle salt and pepper and mix well.
Cook the chicken in the microwave on high power for 4 minutes.
Sprinkle the maida on the chicken and mix well. All the cubes should be well coated. This is the first layer of coating.
In a small bowl lightly beat the egg with a little salt. Set aside.
Put the breadcrumbs in a large ziploc bag or a large bowl. The bag is preferable as it ensures even coating.
Now one by one, prick each piece of chicken with a toothpick, dip in the egg and drop in the breadcrumbs. Use a second toothpick to slide the piece off. Give the bowl or bag a slight shake after dropping the piece.
When all the pieces are in the breadcrumbs give a good shake to the bag or bowl. You will find all pieces well coated. Take out all the pieces from the ocean of breadcrumbs and repeat the process of dipping, sliding, shaking and more shaking.
When all the pieces have had undergone two rounds of being coated with egg and breadcrumbs place them on a large plate with space between them and let them sit in the fridge for an hour.
After an hour it is time to taste our hardwork. Heat oil in a wok. Deep fry all the pieces on medium flame till golden brown.
Serve hot with any sauce or dip of your choice!
Tips:
These nuggets can be kept frozen for a couple of days. They make excellent starters for parties.
