Come winter and we get to see a whole lot of colour in the vegetable market. Among these colours we cannot afford to miss the bright and beautiful carrot and the handsome radish.
We often make mooli paratha but today I decided to make parathas using these two roots – the carrot and the radish. Not only does the paratha look good but also has a twist in its taste.
This is how the root paratha goes:
Root Paratha
Ingredients
- Whole wheat flour – 1 1/2cups
- Besan – 1/2 cup
- Carrots – 2 small sized
- Radish – 1 large
- Coriander leaves – 1/2 cup chopped
- Onion seeds (kalonji) – 1 tsp
- Salt to taste
- Ghee – 2 tbsp
- Extra ghee for preparing the paratha
Method
Wash the carrots and radish thoroughly. If required you can peel off a thin layer. Grate the carrots and radish.
In a mixing bowl add all the ingredients and the 2 tbsps of ghee. Mix well and leave for 15-20 minutes.
The carrots and radish would have given off some water due to the salt. Mix once again. Knead to a soft dough. Add water only if required. Otherwise the water exuded by the roots should be enough to knead.
To make the paratha, take large lemon sized ball of the dough. Roll it in some dry flour and roll out a small disk.
Apply ghee to the disk, fold in half, apply some ghee and fold in half. You should now have a triangle.
Coat this triangle in dry flour and roll out an approximately 2-3 mm thick paratha.
Place the paratha on a hot tava. Keep the flame to a medium. When you see the colour changing flip over.
Allow to cook for two minutes. Smear a teaspoon of ghee on the paratha, flip over and smear some more ghee.
When you see brown spots appearing on both sides the parathas would be done.
How much you cook after applying ghee on both sides is also a matter of personal choice. Some want it hot and crisp while some like it hot and soft.
Repeat the same with the remaining dough.
Serve the root parathas hot with accompaniments of your choice. Suggestions include curd, pickle, chutney, raita and butter.
I, personally like to have my parathas with pickle and chutney. Another thing that goes with parathas in my home is sev – the ratlami sev.
